INGREDIENTS
- 1 pound ground beef
- 1 pound ground pork
- 2 cups frozen hash browns, thawed
- 1/2 cup shredded carrots
- 1 yellow onion, shredded in food processor
- 1/2 cup fresh parsley, chopped
- 2 large eggs
- 2 teaspoons salt
- 1 teaspoon ground black pepper
- 2 teaspoons Italian seasoning
- 1/2 cup hickory smoke BBQ sauce
DIRECTIONS
Preheat oven to 350 degrees.
In a large bowl combine all ingredients, except BBQ sauce, with hands. Place into cast iron skillet. Form into a round mound with a dome in the center (like a donut). Top loaf with BBQ sauce. Bake for 90 minutes or until thickest part reads 160 degrees on instant read thermometer. Let rest for about 10 minutes before serving.
