Last Day of School

Today was the last day of school for my little angels.  I wanted to surprise them and the neighborhood children with a treat when they got off the bus.  I thought of getting water balloons and throwing them at them, I thought of getting water guns and shooting them, and I thought of shooting them with silly string.  I thought of another idea that would not make a mess and would not get the other parents mad if their kid got soaked, CUPCAKES!  With a child in the neighborhood having a nut allergy I did not want to take chances with store bought cupcakes or a boxed cake mix.  So I made them from scratch.  These were so good I skipped lunch and ate a cupcake or two or three.


Vanilla Cupcakes with Cinnamon Honey Frosting

Cupcake INGREDIENTS

  • 3 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 2 stick of butter
  • 2 cups sugar
  • 6 eggs
  • 3 teaspoons vanilla extract
  • 1 1/2 cups milk
  • Cupcake DIRECTIONS

    Preheat oven to 350 degrees.  Line with paper liners two muffin tins (each with 12 openings).
    In a medium bowl sift all dry ingredients.
    In another medium bowl cream together butter, sugar, eggs, and vanilla extract.
    Mix in alternating dry ingredients and milk, until well combined.
    Using an ice cream scoop place batter into cupcake lined muffin tins.  Bake for 20 minutes or until toothpick comes out clean.

CUPCAKE INGREDIENTS

2 1/2 cups confectioners' sugar
2 sticks of butter, room temperature
12 oz cream cheese, room temperature
4 tablespoons honey
1/2 teaspoon ground cinnamon

DIRECTIONS

In a medium bowl, using an electric mixer, beat all ingredients together until smooth.  Then whip on high speed for 1 minute to make frosting fluffy.
Refrigerate any leftover frosting.

I gave my camera to Brian to document this.  Let's just say he's not ready to shoot for Berryphotos quite yet.  We got a lot of pictures of torsos with no heads. This is the only good shot he captured.  :)
