Low Calorie Meals


Not sure if you have noticed, but the last few posts I've made have been low calorie meals.  I've started a diet with the intention of getting rid of my muffin top.  The muffin top may be the best part of the muffin, but on me, it's just not flattering.  Speaking of which have you ever seen this Sienfield episode?  It's hilarious!



But I digress.  My goal is to get rid of 10 pounds before my birthday.  So my question to you is what are you favorite low calorie recipes?  And to make this fun, if I cook your recipe and like it I'll give you a sweet prize!!!

  1. Zuppa Tuscana.
    1 lb ground Italian sausage
    1½ tsp crushed red peppers
    1 large diced white onion
    1 tsp garlic powder
    1 tbsp butter
    10 cups water
    5 cubes of chicken bouillon
    1 cup half and half
    1 lb sliced Russet potatoes, or about 3 large potatoes
    ¼ of a bunch of kale

    1. Sauté Italian sausage and crushed red pepper in a large pot. Drain excess fat, refrigerate while you prepare other ingredients.
    2. In the same pan, onions and garlic with butter over low-medium heat for approximately 15 mins. or until the onions are soft.
    3. Add chicken bouillon and water to the pot and heat until it starts to boil.
    4. Add the sliced potatoes and cook until soft, about half an hour.
    5.Add the half and half and just cook until thoroughly heated.
    6. Stir in the sausage and the kale, let all heat through and serve. Delicious!

    Serving size is around 1 cup and it's about 150 calories. =]
