Cookie Ice Cream Sandwiches

The kids asked for dessert and I told them to get a cookie.  They were very disappointed and so I told them to let me finish my work for the night and I would give them a special treat.  I brainstormed to come up with an easy dessert.  And the cookie ice cream sandwich was born.

I took the left over cookies from the other day and added a scoop of their favorite ice cream.  With the addition of some garnish of strawberries, peanut butter chips, fresh homemade whipped cream and some sifted coca powder these came out so nice the kids acted as though we were on the Food Network show Chopped.  Lucky for me they all liked them and and did not chop me as their mommy.
