Heart Shaped Chicken Parmesan

Serves 5

Ingredients:
1/4 cup Vegetable Oil
5 Boneless Skinless Chicken Breasts, pounded to thin to 2/3 inch thickness
2 Eggs, scrambled
2 cups Italian Bread Crumbs
5 Slices of Mozzarella Cheese
1 jar Your Favorite Pasta Sauce

Method:
1) With kitchen shears cut each chicken breast into a hear shape.
2) Heat skillet over medium high heat. Add oil.
3) Dredge each breast through first the egg and then the bread crumbs. Place each covered breast in the skillet, cooking until browned (about 5 minutes). Flip chicken over and brown other side.
4) Place chicken, once browned on each side, on a plate lined with paper towels.
5) Heat oven to 350 degrees.
6) Spray a baking dish with non-stick spray. Spoon sauce to cover bottom of baking dish. Place breasts in baking dish. Carefully spoon sauce on top of each breast.
7) With a large heart shaped cookie cutter cut mozzarella slices. Place one slice on each breast.
8) Place baking dishes in over for 20 minutes or until chick is cooked through.
9) Just before serving, place the oven on the broil setting until cheese is browned and bubbly.
