1tbsp extra virgin olive oil
2 cloves garlic, minced
1 tsp cumin
1 tsp curry
1 15 oz can pumpkin
1 14 oz can diced tomatoes with chilies
1 cup corn kernels
1/2 cup salsa
1 cup chicken broth
1 14oz can coconut milk
Sea salt and fresh ground pepper, to taste
Chopped cilantro, to taste
1 tsp raw organic agave nectar
Juice from one 1 fresh lime
1 can black beans
I placed all of the ingredients in my crock pot and cooked on low heat for four hours. Serve with organic blue corn tortilla chips.
