Irish Nachos from Rachael Ray
Ingredients
- 1 20- to 24-ounce bag waffle fries
- 2 tablespoons EVOO – Extra Virgin Olive Oil
- 1 pound deli-sliced corned beef, chopped
- 1 small onion, thinly sliced
- 1/2 small head green cabbage, thinly sliced (about 2 cups)
- Salt and ground black pepper
- 2 tablespoons butter
- 2 tablespoons flour
- 1 cup light beer
- 1 cup chicken stock
- 1 cup shredded white cheddar cheese
Yields: 4-6 servings, as a snack
